baked apple cider donuts

Is there anything in the world more comforting and all around delightful than homemade donuts? Warm, cakey & dusted with cinnamon sugar, an apple cider reduction brings out all the apple goodness in this baked cold weather fave.
This recipe uses our caffeine-free Apple Cider tea, which is dripping in sweet apple flavour with an added hint of vanilla creaminess that kicks the flavours up a notch.
We know what you’re thinking: making homemade donuts sounds a little… complicated. But donut fear, this recipe is simple & straightforward, with no mixer or deep frying required. So, next time you’re craving those homey, straight-from-the-orchard vibes whip up a batch of these to share with the apple of your eye.
ingredients:
Apple Cider Concentrate:
1 Perfect Spoon (2 ½ tsp) Apple Cider tea
360 ml (12 oz) apple cider
Donuts:
28 g melted unsalted butter
100 g packed light brown sugar
110 g granulated sugar
120 ml (4 oz) apple cider concentrate
1 large egg
120 ml (4 oz) milk
1 tsp vanilla paste
250 g all-purpose flour (spooned & leveled)
1 tsp baking soda
¾ tsp baking powder
1 tsp ground cinnamon

In a small saucepan, combine apple cider and tea leaves.

Heat over medium, then reduce to low and simmer until the liquid reduces to about half. Strain and let cool.

Preheat oven to 175°C (350°F) and grease a donut pan.

In a large bowl, whisk together melted butter, brown sugar, granulated sugar, concentrated apple cider, egg, milk and vanilla until smooth

In a separate bowl, mix the flour, baking soda, baking powder and cinnamon.

Gradually fold the dry ingredients into the wet until just combined.

Spoon the batter into the prepared donut pan, filling about three quarters full.

Bake for 12-15 minutes, or until a toothpick comes out clean.

Let cool in the pan for a few minutes then transfer to a wire rack.
- Dust with cinnamon sugar while slightly warm for an extra cozy touch.
